Photogrammetry
Photogrammetry is a method of capturing objects and creating 3D replicas of them. It consists of multiple images of the subject which overlap with each other so the process can stitch them together and create a 3D mesh. This mesh is adhered with a texture surface then recreates the suject and can be formatted into a file that can work with you final intentions.

Depth
Stereography
This is basically a stereo pair of images slightly offset to compensate to the natural separation of your eyes. WHen projected back it the images are projected back to the corresponding eye usually in an isolated manner. Think 3D glasses, VR head sets. There is credible depth to this and works well with live action sujects.
LIDAR
LIDAR is a essentially the capture of an object by sending a iight wave from your camera source to reflect the object back to the camera for processing. Based on the depth of the subject the light wraps itself and creates the model of the object from there, as well as capture the texture. There are many aspects to this type of capture from self driving cars to the recording of interior building measurements, to the creation
